    What Makes a Good Blade Steel

    A good knife steel combines several properties: it should take a keen edge and hold it (edge retention), be easy to re-sharpen, tough enough not to chip, and – depending on the grade – corrosion resistant. Some of these properties pull against each other, so the “best” steel depends on the use.

    Stainless or Carbon?

    Stainless steels contain chromium and are low-maintenance and practical for everyday use. Carbon steels often take an exceptionally keen edge and are easy to sharpen, but they are not stainless and need more care. Which type suits you comes down mainly to how much care you want to invest and what you use the knife for.

    The Role of Hardness (HRC)

    Rockwell hardness (HRC) describes how hard the steel is. Harder blades hold their edge longer but can be more brittle; softer blades are more robust but dull faster. Most kitchen knives sit in a balanced range of roughly 55 to 60 HRC.
