The Chinese cleaver from F. HERDER has a broad, rectangular blade 18 cm long. The design follows the Chinese kitchen knife, which is used as an all-purpose knife in Asian cooking.
Despite the name it is not a hatchet for bone, but a slicing knife: the large, straight edge works with a drawing cut over the full length of the blade and is suited to vegetables, herbs and boned meat.
The broad face of the blade takes on a second task – cut ingredients can be picked up with it and carried from the board to the pot without reaching for another tool. The plastic handle is available in black and green; the colour coding makes it easier to assign knives to fixed working areas.
The blade carries the engraving Friedr. Herder Abr. Sohn, the marking SOLINGEN GERMANY STAINLESS, the spade symbol with the lettering PIKAS as well as the series lettering Don Carlos.
