The broad chef's knife from F. HERDER is available in 21 and 26 cm. The blade is noticeably taller at the heel than on the slim version and runs in a long arc to the point.
The greater blade height has two consequences: the knuckles stay further away from the board while cutting, and the broader face is useful for picking up and moving cut ingredients.
The bellied edge allows rocking cuts, where the point stays on the board and only the rear part of the blade is lifted – the fastest technique for herbs and fine vegetables.
21 cm is the size for daily work, 26 cm offers blade length for large pieces and high volumes. The green plastic handle is insensitive to moisture and easy to clean.
The blade carries the engraving Friedr. Herder Abr. Sohn, the marking SOLINGEN GERMANY STAINLESS, the spade symbol with the lettering PIKAS as well as the series lettering Don Carlos. Made by F.
