The filleting knife with an 11 cm blade from F. HERDER is the short version for fine trimming work. The blade is narrow, straight and tapers to a point.
The short blade stays close to the hand and can be guided accordingly precisely. It is intended for small fish, portion cuts and releasing individual sections, where a long blade would travel too far.
Because the edge runs straight, it rests along its full length during the pull and separates evenly – without the rocking motion of a bellied chef's knife.
The green plastic handle is insensitive to moisture and easy to clean.
The blade carries the engraving Friedr. Herder Abr. Sohn, the marking SOLINGEN GERMANY STAINLESS, the spade symbol with the lettering PIKAS as well as the series lettering Don Carlos. Made by F. HERDER in the tradition-rich knife city of Solingen. Made in Germany, with the standard of quality that has distinguished the brand since 1727.
